Turkish manti are delicious dumplings filled with spiced meat, typically served with a tangy yogurt sauce and a drizzle of melted butter infused with spices. These savory treats are a staple in Turkish cuisine and are loved for their rich flavors and comforting texture.

- Wheat Flour - 12.3 oz
- Water - 4 fl oz
- Chicken Egg - 1 piece
- Lean Beef - 8.8 oz
- Onion - 1 piece
- Cayenne Pepper - to taste
- Natural Yogurt - 5.3 oz
- Garlic - 2 cloves
- Butter - 2.8 oz
- Dried Rosemary - to taste
- Sumac - to taste
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Prepare the dough. Combine 300 grams of flour, salt, water, and an egg. Knead the dough until it begins to pull away from the sides of the mixer.
Step 3
Divide the dough into two pieces, cover with a damp cloth, and let it rest.
Step 4
Mix the ground meat, cayenne pepper, 1 teaspoon each of salt and black pepper, and the grated onion.
Step 5
Dust the work surface and rolling pin with flour, then roll out one portion of the dough while keeping the other covered with a towel. Roll it into a circle about 50 cm in diameter. If the dough keeps springing back, let it rest a little longer.
Step 6
Cut the rolled-out dough into squares with sides of 3 cm.

Place a small amount of meat filling in the center of each square. Lightly moisten your fingers and press the opposite ends of the dough together. Then, fold all four edges of the dough together and seal them. Arrange the dumplings on a baking sheet dusted with flour. To prevent the dough from drying out during the process, you can cover it with plastic wrap or a damp towel.
Step 8
Bring a large pot of water to a boil and add a pinch of salt along with garlic cloves.
Step 9
Boil the dumplings for about 3 minutes, then remove the pot from the heat and add a cup of ice-cold water to stop the cooking process.

Remove the garlic cloves from the water and chop them. Mix with yogurt and half a cup of the water used to cook the dumplings. Season with salt and pepper.

In a saucepan, melt the butter and heat it until it takes on a light caramel color. Add cayenne pepper.

Place the dumplings on a plate, drizzle with yogurt sauce and spicy oil.

Garnish with dried mint and sumac, and serve.
