Tuscan Tuna and Fennel Salad
Ingredients
- Olive Oil - ¾ cup
- Meyer Lemon Juice - ½ cup
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Tarragon - 2 tablespoons
- Italian chopped parsley - 0.9 oz
- Canned Mackerel in Oil - 12 oz
- Fennel - 1 piece
- Celery stalk - 2 pieces
- Spanish onions - ½ head
- Mixed salad greens - 15.9 oz
- Orange Bell Peppers - 1 piece
- Pitted olives - ½ cup
Step by Step guide
Step 1
In a small bowl, mix together the olive oil, lemon juice, salt, pepper, tarragon, and parsley. In another bowl, combine the tuna with finely chopped fennel, celery, and finely chopped onion, and add the dressing, reserving a small amount. Mix well.
Step 2
Cut the salad leaves into strips. Place in a bowl and toss with the remaining dressing. Serve on plates and top with a small amount of the tuna salad. Garnish with red pepper and olives.
