  • Udon Noodles - 8.8 oz
  • Snap Peas - 7.1 oz
  • Onion - 1 head
  • Courgette - 1 piece
  • Miso Paste - 2 tablespoons
  • Rice Vinegar for Sushi - 1 tablespoon
  • Water - 2 tablespoons
  • Broccoli - 7.1 oz

Step by Step guide

Step 1

Boil the udon noodles and drain in a colander to remove excess water.

Step 2

Steam the broccoli florets and peas. Drizzle with lemon juice.

Step 3

Peel the cucumber and slice it into thin rings.

Step 4

Pour boiling water over the onion and slice it into thin rings.

Step 5

For the dressing, dissolve the miso paste in water and mix with rice vinegar.

Step 6

Combine the vegetables, dress with the sauce, and season with salt and pepper.
