Ukrainian Young Potatoes
Ingredients
- Young Potatoes - 2 lbs
- Dill Stems - 2 pieces
- Salt - to taste
- Onion - 2 heads
- Vegetable Oil - 3 tablespoons
- Butter - 2 tablespoons
- Sour Cream - 7.1 oz
- Chopped dill - 1.2 oz
- Chopped Parsley - 1.2 oz
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Wash the potatoes well, do not peel. Larger ones can be cut in half. Leave the small ones whole.
Step 2
Place the potatoes in a large pot, cover with water, add the dill stems and 2 teaspoons of salt, and boil until tender. The potatoes should be soft and easily slide off a knife when pierced.
Step 3
While the potatoes are boiling, heat the butter and vegetable oil in a large deep skillet. Add the onion, season with salt and pepper, and sauté, stirring, until it begins to brown.
Step 4
Add the sour cream and simmer for another 5 minutes. Remove from heat.
Step 5
Drain the cooked potatoes, remove the dill stems, and place them in the skillet with the sauce. Add the chopped herbs, mix, and serve immediately.
