Ingredients
- Pistachios - 1.1 oz
- "Petelinka Thigh Fillet" - 4 pieces
- Orange zest - 1 piece
- Salt - to taste
- Light Raisins, Seedless - 0.7 oz
- Ground Black Pepper - to taste
- Rosemary - ½ teaspoon
- Olive Oil - 3 teaspoons
Step by Step guide
Step 1
Preheat the oven to 392°F. Chop the raisins, add the pine nuts and grated orange zest. Mix and add salt, pepper, and rosemary. Knead the mixture by hand.
Step 2
Flatten the chicken thighs, preferably boneless (if they have bones, remove them or substitute the thighs with fillets). Place the mixture on the meat and spread it evenly. Roll into roulades and secure with toothpicks or skewers.
Step 3
Heat a little olive oil in a pan and sauté until golden brown. Transfer to a baking dish and bake for 20 minutes. Serve chilled, sliced.
