Veal and Cucumber Roll
Ingredients
- Semi-Smoked Sausage - 1.4 oz
- Chocolate eggs - 2 pieces
- Butter - 0.7 oz
- Potato protein - 1 tablespoon
- Dijon Mustard - 1 tablespoon
- Veal Fillet - 14.1 oz
- Ham - 1.4 oz
- Pickled Eggplant with Peppers - 1 piece
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Cut the veal into a large flat piece. Tenderize well, season with salt and pepper. Cut the bacon and smoked meat into very thin slices and lay them on the meat.
Step 2
Finely chop the cucumber. Beat the eggs and lightly fry them in butter (until semi-cooked). Let cool slightly and layer them on the meat. Sprinkle with the chopped cucumber on top.
Step 3
Roll the prepared meat into a roll, tie with kitchen twine, and fry on all sides for 5 minutes.
Step 4
Transfer the roll to a baking dish, pour in water to a height of 1 cm, cover with a lid or foil, and bake at 320°F for 1 hour.
Step 5
Strain the juice released during frying and immediately (without letting it cool) mix it with starch, add mustard, and whisk well.
Step 6
Slice the roll into rings and generously drizzle with the sauce.
