Veal Baked with Kiwi (African Cuisine)
Ingredients
- Veal - 2 lbs
- Kiwi - 2 pieces
- Ground Black Pepper - to taste
- Tarragon - 1.6 oz
- Fresh basil leaves - a pinch
- Salt - to taste
Step by Step guide
Step 1
Peel the kiwi, cut one fruit lengthwise, and chop the other.
Step 2
Pat the meat dry, make cuts on the top and across, then insert slices of kiwi into the cuts. Rub the chopped kiwi on top of the meat.
Step 3
Wrap the piece in foil and place it in the refrigerator for an hour.
Step 4
Unwrap the foil, place a sprig of tarragon on top, sprinkle with dried basil, season with salt and pepper, then seal the edges of the foil over the meat.
Step 5
Bake the meat at 180–392°F until cooked through.
Step 6
When the meat is ready, leave it in the oven for a few minutes without the foil to develop a crust.
Step 7
When serving, slice the meat, and you can use rice or vegetables as a side dish.
