Ingredients
- Thymus gland - 2.8 oz
- Apple - 3.5 oz
- Butter - 0.7 oz
- Olive Oil - 0 fl oz
- Wheat Flour - 0.4 oz
- Spanish onions - 2.5 oz
- Chicken Broth - 2 fl oz
- Poultry - 1 piece
- Cream - 1 fl oz
- Milk - 2 fl oz
- Porcini Mushrooms - 3 pieces
- Dried Chinese mushrooms - 6 pieces
- Shallot - to taste
- Salt - 0.1 oz
Step by Step guide
Step 1
Clean the iron thoroughly to remove any membranes and blanch it in milk, then clean it even more carefully to remove any small membranes.
Step 2
Peel the apples and remove the seeds, then cut them into large pieces. Smoke them over wood chips in a perforated tray for 10 minutes, but don't do it too vigorously, or they will become bitter. Next, place them in a plastic container, add 10 grams of butter, and microwave for 4 minutes. Remove and strain through a sieve to let the moisture drain, then blend and pass through a sieve again.
Step 3
Slice the white onion into strips and sauté in butter for 40 minutes, then add the broth and simmer for another 30 minutes. Finally, add the cream and blend until smooth. Season with salt and transfer to a siphon with 2 cream chargers.
Step 4
Immerse the chicken three times in boiling water, then ice water, and back to boiling water. After that, hang it in a cold oven, set the temperature to 482°F, and leave it there for 15 minutes. Remove it and, while it's still hot, peel off the crispy skin and let it dry slightly.
Step 5
Grind the dried white mushrooms in a blender or coffee grinder until they reach a powdery consistency, similar to powdered sugar.
Step 6
Coat the fish in flour and fry in olive oil for 4 minutes.
Step 7
On a plate, place the smoked apple puree, add the onion espuma on top, then lay the cooked dish over it. Garnish with crispy skin, sprinkle with powdered porcini mushrooms, and add freshly cut apple matchsticks.
Step 8
6 dried morels, soak in cold water for 3 hours, then sauté in butter with chopped shallots before serving.
