Ingredients

  • Veal Kidneys - 24.7 oz
  • Onion - 1 piece
  • Clarified Butter - 2 tablespoons
  • Wheat Flour - 1 tablespoon
  • Salt - ½ teaspoon
  • Chicken Broth - ½ cup
  • 33% Cream - ½ cup
  • Whole egg - 1 piece
  • White Pepper (whole) - to taste
  • Brandy - 2 tablespoons
  • Chopped Sage Leaves - 1 teaspoon

Step by Step guide

Step 1

Cut the kidneys, remove the membranes and ducts, soak them in cold water for 2-3 hours, changing the water 3-4 times during this time. Then drain the water, pat the kidneys dry, and slice them thinly.

Step 2

Peel and finely chop the onion, sauté it in clarified butter until translucent.

Step 3

Mix the flour with salt and coat the kidney pieces in it. Place them in the pan with the onion and fry, turning, for 4-5 minutes over medium heat.

Step 4

Add the meat broth, bring to a boil, and remove from heat. Whip the cream with the yolk, pour it into the pan with the kidneys, season with salt and pepper to taste. Add the brandy, stir, and sprinkle with parsley.
