Ingredients
- Veal Kidneys - 12 pieces
- Bacon - 4 slices
- Brandy - 1 fl oz
- Campbell's Beef Broth - 4 fl oz
- Worcestershire Sauce - 0 fl oz
- Mustard Greens - 0.4 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Port Wine - 0 fl oz
- Corn Starch - 2 teaspoons
Step by Step guide
Step 1
Fry the bacon slices until crispy, then chop finely.
Step 2
In the same oil, fry the kidneys until cooked and place them on a plate with the bacon.
Step 3
In the same pan, add the brandy and return to heat. Pour in the broth, Worcestershire sauce, mustard, salt, and pepper, and cook for 5 minutes. Add the cornstarch and port wine to the sauce.
Step 4
Pour the sauce over the kidneys and serve with rice and herbs.

Clean the kidneys, rinse them, and cut them in half.
