Veal Medallions with Roasted Potatoes

Ingredients

  • Veal Fillet - 6.3 oz
  • Salad Potatoes - 5.6 oz
  • Tomatoes - 2.5 oz
  • Fresh basil leaves - 0.5 oz
  • Onion - 0.5 oz
  • Fresh Rose Hips - 0.1 oz
  • Butter - 0.7 oz
  • Vegetable Oil - 1 fl oz
  • Olive Oil - 1 fl oz
  • Ground Black Pepper - a pinch
  • Garlic - 2 cloves

Step by Step guide

Step 1

Cut the potatoes into wedges, season with salt and pepper, add rosemary and crushed garlic in its skin, and roast.

Step 2

Chop the tomatoes coarsely, mix with julienned onion, salt, and olive oil.

Step 3

Cut the meat into medallions, season with pepper, fry to the desired doneness, and salt at the end.

Step 4

Blend the basil with olive oil and mix with butter.

Step 5

On a plate, arrange the medallions, top with basil butter, place the roasted potatoes and tomato salad alongside, and garnish with basil.
