Ingredients

  • Lard - 3.5 oz
  • Veal Tenderloin - 8.5 oz
  • Spanish onions - 3.5 oz
  • Pickled Chanterelles - 1.8 oz
  • Citrus Zest Mix - 0.2 oz
  • Breadcrumbs - 0.4 oz
  • Chopped Sage Leaves - 0.4 oz
  • Dijon Mustard - 0.7 oz
  • Chicken Egg - 1 piece
  • Thyme - 0.2 oz
  • Semi-Smoked Sausage - 8 pieces
  • Garlic - 2 cloves
  • Wheat Flour - 1.8 oz
  • Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Place the lard in a large skillet over medium heat.

Step 2

Once the fat starts to melt, add the chopped onion and mushrooms.

Step 3

Increase the heat and cook for about 6 minutes. Then remove from heat, transfer to a medium bowl, and leave the lard in the skillet.

Step 4

In this bowl, add the lemon zest, breadcrumbs, parsley, half a teaspoon of Dijon mustard, and the egg. Season with salt and pepper. Mix everything thoroughly and set aside.

Step 5

Slice the veal tenderloin into 8 thin pieces and lightly pound them. Season with salt, pepper, and add thyme.

Step 6

Place the prepared filling in the center of each slice. Roll them up, wrap with bacon, and tie with twine or string.

Step 7

Heat the skillet with the remaining lard. Sear the rolls until golden brown on both sides.

Step 8

Add water to cover the meat almost completely and simmer for 10 minutes.

Step 9

Add the garlic and remaining mustard. Stir in the flour, reduce the heat, and continue to cook on low for 30 minutes.

Step 10

In the end, you should have a fairly thick sauce. Serve with rice or boiled potatoes.
