Ingredients

  • Veal Escalope - 12 pieces
  • Chopped Sage Leaves - 24 pieces
  • Prosciutto - 12 pieces
  • Dry White Wine - 4 fl oz
  • Olive Oil - 3 fl oz
  • Salted Butter - 2.8 oz
  • Wheat Flour - a pinch
  • Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Place a slice of prosciutto and 2 sage leaves on each scaloppine.

Step 2

In a shallow dish, combine the flour with salt and pepper, mixing well.

Step 3

Fold the meat in half and lightly coat it in flour.

Step 4

Heat the olive oil and butter together over high heat.

Step 5

Sear the meat on both sides for two minutes and then remove to a plate.

Step 6

Next, pour the wine into the same skillet, stirring constantly until the alcohol evaporates. Then drizzle this sauce over the meat.
