- Pitted olives - 1.8 oz
- Sun-Dried Tomatoes - 1.8 oz
- Fresh basil leaves - 0.4 oz
- Demi-Glace Sauce - 7.1 oz
- Milk - 3 fl oz
- Cream - 3 fl oz
- Farm fresh eggs - 5 pieces
- Grated Pecorino Pepato Cheese - 3.5 oz
Step by Step guide
Step 1
Sauté the white mushrooms in oil beforehand.
Step 2
Chop the nuts, olives, and tomatoes into small cubes, and add the basil. Add garlic and thyme to the demi-glace sauce, simmer, remove the spices, and add all the prepared ingredients.
Step 3
Mix the milk, cream, eggs, and parmesan well, pour into molds, and cook at 194°F for 30 minutes. Cool and remove from the molds.
Step 4
Sear the veal on all sides in olive oil with thyme and garlic, then finish cooking in the oven and place on a plate. Slightly warm the crème brûlée and place it alongside. Serve with pickled shallots and sauce.
