Veal with Mushrooms and Spinach in Sambuca Sauce
Ingredients
- Pickled Chanterelles - 2.8 oz
- Young Spinach "Belaya Dacha" - 1.8 oz
- Sambuca - 1 fl oz
- 10% cream - 2.8 oz
- Vegetable Oil - 0 fl oz
- Butter - 0.4 oz
- Ground Black Pepper - a pinch
- Veal - 7.1 oz
- Marinated cherries - 4 pieces
- Pesto - 0.2 oz
Step by Step guide
Step 1
Cut the veal steak into 2 pieces, grill in a skillet with cherry tomatoes, seasoning with salt and pepper.
Step 2
Cut the mushrooms into 4 pieces, sauté in vegetable oil, add butter and spinach, mix and set aside.
Step 3
Reduce the cream with sambuca, add the meat and warm through.
Step 4
Drizzle the cherry tomatoes with pesto.
Step 5
Using a ring mold, place the mushrooms with spinach, next to it – the meat, and drizzle with sauce.
Step 6
Garnish with cherry tomatoes.
