Vegan 'Brezolki'

Ingredients

  • Potatoes - 5 pieces
  • Carrots - 2 pieces
  • Mushrooms - 5.3 oz
  • Garlic - 1 clove
  • Onion - 1 piece
  • Oats - ½ cup
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Vegetable Oil - 1 fl oz

Step by Step guide

Step 1

Soak the oats in warm water in advance. Take half a cup of oats and pour one cup of hot boiled water over them. Let the oats steep.

Step 2

Pour a little vegetable oil into a frying pan and place it on the stove.

Step 3

Slice the garlic clove into thin slices and sauté it in the frying pan with vegetable oil. This is necessary for the garlic to infuse the oil with its flavor and aroma. After this, remove the garlic from the pan – we won't need it anymore.

Step 4

In the infused oil, sauté the chopped mushrooms until they develop a light golden crust.

Step 5

Set aside some of the sautéed mushrooms for garnishing the finished dish.

Step 6

Add a randomly chopped half of the onion to the mushrooms. Sauté everything for 2 minutes, stirring constantly.

Step 7

Also add a randomly chopped carrot and sauté for another 2 minutes, stirring constantly. You can add a little salt.

Step 8

Remove the frying pan from the heat and start blending all our ingredients for the vegan 'brezolki' using a blender.

Step 9

Place part of the potatoes and the remaining half of the onion into the blender. Blend everything.

Step 10

Transfer the resulting mixture into a bowl where we will mix everything.

Step 11

Add the soaked oats, the remaining potatoes, and the contents of the frying pan into the blender. Blend everything together.

Step 12

Add the resulting mixture to our bowl and mix everything thoroughly.

Step 13

While mixing, add salt and ground black pepper to taste.

Step 14

Pour vegetable oil into the frying pan and start placing our vegan 'brezolki' using a regular tablespoon.

Step 15

Fry on one side until golden brown.

Step 16

Then flip them over and cover with a lid so that the vegan 'brezolki' steam a little.

Step 17

Place the finished 'brezolki' on a plate and garnish with the reserved sautéed mushrooms. Enjoy your meal!
