Vegan bulgur pilaf with eggplants (Lenten)
Ingredients
- Bulgur - 1 glass
- Onion - 1 piece
- Leek - 1 piece
- Carrot - 1 piece
- Eggplants - 1 piece
- Olive Oil - 4 spoons
- Salt - to taste
- Garlic - 4 cloves
- Basil - to taste
Step by Step guide
Step 1
Sauté finely chopped onion separately, then add sliced leek and shredded carrot, and transfer to a large pot.
Step 2
Cut the eggplants into large cubes and sauté them over high heat, then add them to the other vegetables.
Step 3
Place the pot with vegetables over low heat for a couple of minutes, add five peeled garlic cloves, season with salt, and add basil and olive oil.
Step 4
Add one cup of bulgur to the vegetable mixture and stir well. After five minutes, add two cups of hot water and mix again.
Step 5
Cook in the oven in a covered pot at 356°F for 15 minutes.
