Ingredients

  • Ground coriander - 0.7 oz
  • Chicken Broth - 6 cups
  • Onion - 1 head
  • Garlic - 4 cloves
  • Orange Bell Peppers - 1 piece
  • Carrot - 2 pieces
  • Rice - 1½ cups
  • Kale - 7.1 oz
  • Canned Pork with Beans - 15 oz
  • Butternut Squash - 10.6 oz
  • Passata Tomato Sauce - 8 tablespoons
  • Ocean salt - to taste

Step by Step guide

Step 1

In a large pot, pour half a cup of broth. Add chopped onion, garlic, cilantro, and pepper. Sauté over low heat for 10 minutes, stirring occasionally.

Step 2

Meanwhile, chop the remaining vegetables.

Step 3

Add the remaining broth, all the remaining vegetables, pinto beans, rice, and tomato paste to the pot. Season with salt. Bring to a boil, stirring regularly.

Step 4

When the mixture boils, reduce the heat, cover with a lid, and cook until done. Doneness is determined by the readiness of the rice.
