Ingredients
- Seitan - 7.1 oz
- Spanish onions - 1 head
- Garlic - 3 cloves
- Orange Bell Peppers - 1 piece
- Eggplants - 1 piece
- Cauliflower - 7.1 oz
- Tamarind Paste - 2.8 oz
- Coconut Milk - 13 fl oz
- Jasmine Rice - 10.6 oz
- Water - 13 fl oz
- Cilantro - to taste
- Lime - 1 piece
- Salt - to taste
- Mild Chili Spice - 1 piece
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Cook the rice according to the instructions on the package.
Step 3
Cut the onion into wedges and slice the garlic thinly.
Step 4
Remove the seeds from the pepper and cut it into small cubes that will fit on a spoon.
Step 5
Cut the eggplant into thick quarter slices.
Step 6
Break the cauliflower into small florets.
Step 7
In a cast iron pot, heat vegetable oil and sauté the onion and garlic for 2 minutes.
Step 8
Add all the vegetables and seitan, then stir again and sauté for another 2 minutes.
Step 9
Add the curry paste and stir.
Step 10
Pour in the coconut milk, bring to a boil, and simmer for 5–7 minutes until the eggplants are tender.
Step 11
Serve the curry with rice and a wedge of lime, garnished with cilantro leaves and, if desired, slices of chili.
