Vegan dumplings filled with pumpkin and pine nuts.

Ingredients

  • Wheat Flour - 10.6 oz
  • Vegetable Oil - 4 spoons
  • Boiling water - 8 fl oz
  • Pumpkin - 17.6 oz
  • Onion - 2 heads
  • Pumpkin seed oil - 0 fl oz
  • Pistachios - 1.8 oz
  • Nutmeg - to taste
  • Green Peas - 3.5 oz
  • Tomatoes - 7.1 oz
  • Sweet Pepper - 1 piece
  • Garlic - 1 clove
  • Salt - to taste

Prepare all the ingredients.

Sift the flour into a bowl, add salt and 2 tablespoons of vegetable oil.

Slowly pour in the boiling water while mixing the dough with a spatula.

Knead the dough until it becomes elastic and doesn't stick to your hands. If it still sticks, add a little more flour. Shape the dough into a ball, cover it with plastic wrap or a lid, and let it rest for 1 to 1.5 hours.

Prepare the filling. Finely chop the onion and sauté it in vegetable oil until soft.

Add the diced pumpkin and cook until the pumpkin is tender, about 15 minutes. Add the peas and sauté everything together for another 2 minutes.

Puree the mixture using a blender.

Add pine nuts to the filling, add nutmeg, season with salt, and mix well.

On a floured surface, roll out the dough into a thin sheet.
