Vegan Green Rice
Ingredients
- Jasmine Rice - 12.3 oz
- Chicken Broth - 23 fl oz
- Olive Oil - 1 fl oz
- Cilantro - 1.1 oz
- Spinach - 1.1 oz
- Ground ancho chili pepper - 1 piece
- Spanish onions - 7.1 oz
- Garlic - 3 cloves
- Lime - 3 pieces
- Salt - to taste
- Sugar - to taste
- Chili Flakes - to taste
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Squeeze 30 ml of juice from the limes. Cut the remaining limes into wedges for serving.
Step 3
Chop the onion and chili together with the seeds and place them in a blender.
Step 4
Add cilantro, spinach, garlic, lime juice, and 0.5 teaspoon of salt to the blender.
Step 5
Pour 100 ml of broth into the blender and blend until smooth.
Step 6
In a pot, heat the olive oil and sauté the rice for 2–3 minutes.
Step 7
Pour in the remaining broth and add half of the green mixture.
Step 8
Bring to a boil and cook covered on low heat for 15 minutes. Then remove from heat and let the rice steam under the lid for another 15 minutes.
Step 9
Stir the remaining green mixture into the rice. Taste and add salt or sugar as needed.
Step 10
Serve the green rice as a standalone dish or as a side, with a lime wedge and garnished with chili flakes.
