Vegan Millet Salad
Ingredients
- Millet - 2.8 oz
- Water - 8 fl oz
- Marinated cherries - 5.3 oz
- Pickles - 5.3 oz
- Spanish onions - 1.8 oz
- Cilantro - 0.5 oz
- Fresh Mint - 0.5 oz
- Parsley - 0.5 oz
- Olive Oil - 1 fl oz
- Meyer Lemon Juice - 0 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare all the ingredients. Rinse the millet.
Step 2
Pour water over the millet, bring to a boil, and cook on low heat covered for 30–40 minutes.
Step 3
Transfer the cooked millet to a flat dish to cool faster.
Step 4
Cut the tomatoes in half.
Step 5
Dice the pickles into small cubes.
Step 6
Dice the onion into small cubes as well.
Step 7
Finely chop the cilantro and parsley. Remove the leaves from the mint stems and chop them as well.
Step 8
Mix the lemon juice with olive oil, salt, and pepper.
Step 9
Combine the cooled millet with the vegetables and herbs. Drizzle with the dressing and mix well.
Step 10
Serve the millet salad immediately.
