Description
Patties where grated potatoes are closely combined with ground walnuts, oatmeal, and carrots. As a result, after frying, the final taste is more nutty than vegetable. It's better to shape the patties not too thick, more like fluffy pancakes, so they can be cooked with toppings — mushrooms or the same walnuts. Or serve with a green salad and any vegan spreads — whether hummus or zucchini caviar.
Ingredients
- Salad Potatoes - 3 pieces
- Turnips - 2 pieces
- Onion - 1 piece
- Instant Oatmeal - ½ cup
- Walnuts - 1 tablespoon
- Vegetable Oil - 1 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
To save time, chop the potatoes, carrots, onion, and walnuts in a blender.
Step 2
You can also use a fine grater, and chop the nuts separately.
Step 3
Transfer the chopped mixture to a bowl, add 2 tablespoons of vegetable oil. Then season with salt and pepper to taste.
Step 4
Add the dry oatmeal and mix everything well.
Step 5
Cover the bowl with a lid or plastic wrap. Let the vegetable mixture rest in the refrigerator for 20–30 minutes.
Step 6
Then pour vegetable oil into the skillet and take out the mixture.
Step 7
While the skillet is heating, start forming patties, moistening your hands with water. This same technique is used in making classic patties. In this case, the mixture does not stick to your hands, and the patties have a neat shape.
Step 8
Place the patties in the skillet with heated oil and fry them until golden brown under a lid, so they steam additionally.
Step 9
Once golden brown, flip the patties. Fry them under the lid on the other side.
Step 10
You can periodically add a little vegetable oil, as the patties do not have their own fat, unlike meat patties.
Step 11
At the end, you can also add a little warm water and steam the patties for an additional 2–3 minutes under the lid.
Step 12
Remove the patties and place them on a plate. You can also garnish the patties with sautéed mushrooms or herbs.
