Vegetable Bake with Turkey
Ingredients
- Turkey - 14.1 oz
- Pumpkin - 14.1 oz
- Fennel - 1 head
- Marinated cherries - 7.1 oz
- Spanish onions - 1 head
- Olive Oil - 3 tablespoons
- Balsamic Vinegar - 2 tablespoons
- Nigella Seeds - 1 tablespoon
- Garlic - 3 cloves
- Pitted olives - ½ cup
Step by Step guide
Step 1
Preheat the oven to 356°F.
Step 2
Peel the pumpkin and cut it into small pieces.
Step 3
Cut the fennel head lengthwise into 8 pieces.
Step 4
Slice the onion into 8 wedges lengthwise.
Step 5
Crush the garlic with a knife and chop it roughly.
Step 6
Place all the vegetables, except for the garlic and olives, in a baking dish and drizzle with 2 tablespoons of olive oil and 2 tablespoons of balsamic vinegar. Mix well and sprinkle lightly with crushed fennel seeds.
Step 7
Meanwhile, cut the turkey fillet into medium pieces and sauté in the remaining tablespoon of olive oil over high heat, stirring constantly, until golden brown.
Step 8
Add the garlic and sauté for another 1–2 minutes, stirring constantly.
Step 9
Bake in the oven for 40 minutes.
Step 10
Then add the turkey with garlic and olives, drizzle with the juices from the roasted vegetables, and bake for another 6–8 minutes until the turkey is cooked through.
Step 11
Serve with salad and tomato sauce.
