Description
Vegetable casserole is a reliable way to combine a variety of vegetables, bringing them together while preserving their unique character. This recipe is incredibly simple. You will need two types of cabbage—broccoli and cauliflower, taken in equal proportions, cherry tomatoes (which hold up well in any weather), and red onion. The recipe calls for hard cheese—its flavor is up to your preference. When preparing, remember that the cabbage must be blanched, or else the magic won't happen.
Ingredients
- Broccoli - 5.3 oz
- Cauliflower - 5.3 oz
- Spanish onions - 1 head
- Chicken Egg - 3 pieces
- Hard Cheese - 2.1 oz
- Cream - 10 fl oz
- Butter - 0.5 oz
- Marinated cherries - 8 pieces
- Salt - to taste
Step by Step guide
Step 1
Break the broccoli and cauliflower into florets.
Step 2
In a pot, bring water to a boil, add salt, and toss in the cabbage for 1–2 minutes. Then transfer it to cold water and drain in a sieve to remove excess water.
Step 3
Grate the cheese on a fine grater. Whisk the eggs with the cream, then add the cheese, salt, and pepper.
Step 4
Grease a baking dish with butter. Place the cabbage in it, then layer with thinly sliced onions, and pour the egg mixture on top.
Step 5
Cut the cherry tomatoes in half and place them on the vegetables cut side up. Put the dish in the oven preheated to 392°F for 25–30 minutes.
