Ingredients
- Leek - 2 stalks
- Spanish onions - 2 pieces
- Orange Bell Peppers - 2 pieces
- Carrot - 1 piece
- Hard Cheese - 3.5 oz
- Olive Oil - 1 tablespoon
- Salt - to taste
- Garlic - 3 cloves
Step by Step guide
Step 1
Wash and dry all the vegetables. Slice the leek (white and green parts), onion, and carrot into rings. Cut the bell pepper in half, remove the seeds and stem, and chop the flesh coarsely. Peel and mince the garlic. Grate the cheese on a coarse grater.
Step 2
Layer the vegetables in a suitable baking dish in any order. Drizzle with olive oil, season with salt, and sprinkle cheese on top.
Step 3
Place in the oven and bake for 20 minutes.
