- Eggplants - 1 piece
- Courgette - 1 piece
- Orange Bell Peppers - 2 pieces
- Tomatoes - 4 pieces
- Onion - 1 piece
- Garlic - 3 cloves
- Sugar - 2 teaspoons
- Apple Cider Vinegar - 2 tablespoons
- Salt - to taste
- Olive Oil - to taste
- Herbs - to taste
Step by Step guide
Step 1
Chop the unpeeled eggplant, zucchini, and bell pepper finely.
Step 2
Sauté in a saucepan with olive oil for 5 minutes.
Step 3
Transfer the sautéed vegetables to a bowl.
Step 4
In the same oil, sauté the finely chopped onion and peeled tomatoes for 5 minutes, then add vinegar and sugar.
Step 5
Mix with the vegetables in the bowl and add the chopped garlic. Heat the mixture on low heat for 25 minutes.
Step 6
Remove from heat and let cool.
Step 7
Add finely chopped herbs.
