Ingredients
- Young Spinach - 8.8 oz
- Soft Cottage Cheese - 8.8 oz
- Chicken Eggs - 2 pieces
- Coarse Flour - 2 tablespoons
- Polenta - 2 tablespoons
- Mixed salad greens - 1 bunch
- Capers - 1 tablespoon
- Lemon - 1 piece
- Extra virgin olive oil - to taste
- Vegetable Oil - to taste
- Sea Salt - to taste
Step by Step guide
Step 1
Wash the spinach and dry it, but not completely, leaving some droplets on the leaves. Place it in a preheated wide skillet and heat, stirring constantly, until it becomes soft and reduces in volume (about 1.5 cups).
Step 2
Drain in a colander and let it drain for a few minutes, then transfer to a bowl to cool.
Step 3
Beat the eggs, mix with the cooled spinach, then combine with the previously sifted flour and polenta, add the cottage cheese, salt, and let it sit for 15 minutes.
Step 4
Heat vegetable oil in a skillet, spoon the mixture with a tablespoon, and fry for 2 minutes on each side. If not cooked enough, the fritters may fall apart, as the batter is quite loose.
Step 5
Dress the salad greens with olive oil, add capers, and drizzle with lemon juice.
Step 6
Serve the fritters with the salad and a lemon wedge.
