- Potatoes - 5 pieces
- Carrot - 1 piece
- Onion - 1 piece
- Zucchini - 1 piece
- Red Bell Pepper - 1 piece
- Green Bell Pepper - 1 piece
- Green Beans (frozen) - 7.1 oz
- 15% Sour Cream - 3 tablespoons
- Mayonnaise - 3 tablespoons
- Parsley - 3 sprigs
- Dill - 2 sprigs
- Herbes de Provence - to taste
- Salt - to taste
Step by Step guide
Step 1
Take the green beans out to thaw (for speed, I place the bag of beans in hot water for 10-15 minutes).
Step 2
Peel and dice 5-6 medium potatoes (I used young ones), a small zucchini, and an onion. Remove the seeds from the red and green peppers and cut them into pieces. Grate the carrot.
Step 3
Place all the chopped vegetables in a deep, thick-walled dish (I used a pan without handles), and add the green beans. Sprinkle the vegetables with salt and mix everything together. Finely chop the parsley and dill and sprinkle them over the vegetables.
Step 4
Prepare the sauce: mix the sour cream and mayonnaise, add the Herbes de Provence, and mix again. Pour this sauce over the vegetables.
Step 5
Cover with a lid or foil and place in the oven to stew at 170-356°F for 60-80 minutes.
Step 6
Serve the finished dish with a piece of baguette or as a side dish to meat.
