Ingredients
- Ground coriander - to taste
- Turnips - 2 pieces
- Napa Cabbage - ¼ head
- Scallions - 4 pieces
- Cucumbers - 2 pieces
- White Part of Leek - 1 head
- Toasted Cumin Seeds - to taste
- Lime - 1 piece
- Vegetable Oil - 4 tablespoons
- Black sesame seeds - 2 tablespoons
- Soy Sauce - 3 fl oz
- Brown Sugar - 2 tablespoons
- Mild Chili Spice - 1 piece
- Garlic - 3 cloves
- Grated Ginger Root - 0.3 oz
- Celery stalk - 2 pieces
Step by Step guide
Step 1
The most important part of this salad is the vegetable chopping, so let's start by carefully slicing the vegetables:

Peel the carrots with a sharp knife from both ends so they don't fall while slicing, and cut them into thin rounds, then into thin strips.
Step 3
Cut the celery stalks into thin strips as well.
Step 4
Slice the Napa cabbage in the same way.
Step 5
Place the vegetables in very cold water (they can soak for up to 2 hours - they become even crisper).
Step 6
Peel the cucumbers, scoop out the seeds with a round spoon, and cut them into thin strips.
Step 7
Slice the green onions and leek into thin rings at a sharp angle.
Step 8
For the dressing: crush the garlic with a knife and finely chop it.
Step 9
Trim off all the protrusions from the ginger root, stand it upright, and slice off the skin with a knife, then grate or finely chop it.
Step 10
Combine 3 tablespoons of canola oil (I used olive oil), 2 tablespoons of sesame oil, the juice of 1 lime or half a lemon, 2 tablespoons of brown sugar, 100 ml of soy sauce, 2 cm of ginger root, and 2-3 cloves of finely chopped garlic, and the chili (without seeds). Mix well with a whisk.
Step 11
Remove the vegetables from the water, shake off excess water, and add the leek, green onions, and cucumbers to the vegetables.
Step 12
Mix everything by hand with the dressing, sprinkle with cilantro and toasted sesame seeds.
Step 13
The salad is amazing, light, and cleansing. It's perfect for dinner or with meat. Today we had it with roasted pork belly in honey sauce - it's something incredible!
