Vegetable Moussaka with Eggs
Ingredients
- Eggplants - 5 pieces
- Onion - 2 heads
- Carrot - 1 piece
- Rice - ½ cup
- Salad Potatoes - 4 pieces
- Tomatoes - 4 pieces
- Cream - 10 fl oz
- Chicken Egg - 2 pieces
- Salt - to taste
- Hard Cheese - 5.3 oz
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Slice the eggplants and soak them in salted water for half an hour. Then bake them for 15 minutes on a baking sheet in the oven at 180°C.
Step 2
Sauté the onion and carrot in olive oil. Add the rice and pour in hot water, enough to completely cover it.
Step 3
In another pan, fry the sliced potatoes until golden brown.
Step 4
Grease a baking dish with oil and layer the vegetables, remembering to salt each layer. Start with a portion of eggplants, then add the sliced tomatoes, followed by the potatoes, the carrot-onion sauté, and finish with another layer of eggplants.
Step 5
Pour the vegetable mixture with a blend of cream, eggs, and a pinch of salt and pepper on top, then sprinkle with grated cheese. Place the moussaka in a preheated oven at 180°C for 30 minutes.
