Vegetable Rolls and Shrimp Salad in a Cheese Basket

Ingredients

  • Cilantro - 3 stems
  • Tortillas - 1 piece
  • Semi-soft cream cheese - to taste
  • Potato - 1 piece
  • Blanched frozen corn - 3.5 oz
  • Orange Bell Peppers - 1 piece
  • Courgette - 1 piece
  • King Prawns - 6 pieces
  • Garlic - 2 cloves
  • Olive Oil - 3 tablespoons
  • Tarragon - 1 stem
  • 20% Sour Cream - 2 tablespoons
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Chicken Egg - 2 pieces
  • Malt Vinegar - 3 tablespoons

Step by Step guide

Step 1

Spread a thick layer of cream cheese on the corn tortilla, slice the tomato, separate the cilantro leaves from the stem, and carefully place them on top of the cheese. Roll the tortilla into a roll, moistening the edge with water to help it stick. Cut into equal parts.

Step 2

Peel the prawns and remove the intestines. Cut each tail into small pieces. Crush the garlic and sauté it in a pan until golden. Add the prawns and sauté for 2 minutes, then remove from heat, season with salt and pepper, and set aside.

Step 3

Sauté the corn kernels in olive oil until soft (2-4 minutes).

Step 4

Wash the cucumber and pepper. Remove the seeds from the pepper. Dice the vegetables into small cubes.

Step 5

Finely chop the tarragon. In a deep bowl, mix together the prawns, corn, cucumber, pepper, tarragon, sour cream, and season with salt and pepper. Place the mixture into parmesan baskets (you can find the recipe on my page: http://eda.ru/snack/recipe46900/korzinki-parmezanovie).

Step 6

Prepare poached eggs. You will need a deep pot. Fill it with water, bring to a boil, reduce the heat, add wine vinegar, season with salt, whisk to create a whirlpool, and crack or pour in a pre-broken egg. Cook for about 2-3 minutes until the white sets. Carefully remove the egg with a slotted spoon and place it in a deep bowl of cold water to cool, removing any loose parts of the white. Repeat with the second egg.

Step 7

Carefully arrange on each plate: a basket with salad, the rolls, and a poached egg.
