Ingredients
- Tomatoes - 17.6 oz
- Watermelon - 7.1 oz
- Green Pepper - 1 piece
- English Cucumbers - 1 piece
- Radishes - ½ cup
- Olive Oil - 3 tablespoons
- Feta cheese - 10.6 oz
- Onion - 2 heads
- Mint - ¼ cup
- Greek Yogurt - ½ cup
- Dried Oregano - 1 teaspoon
Step by Step guide
Step 1
To prepare the vegetable salad with watermelon and cheese, mix the tomatoes, watermelon, pepper, cucumber, radishes, and 2 tablespoons of olive oil in a large bowl. Add half of the cheese, onion, and mint.
Step 2
Blend the remaining cheese, onion, mint, and oil in a food processor, add the yogurt and oregano. Process well (but not too finely, so the dressing isn't too runny).
Step 3
Season the dressing with salt and pepper, add it to the salad, and mix thoroughly. Serve immediately.
