Ingredients
- Salad Potatoes - 5 pieces
- Tomatoes - 6 pieces
- Courgette - 5 pieces
- Eggplants - 1 piece
- Carrot - 1 piece
- Dill - 1 bunch
- Parsley - 1 bunch
- Onion - 1 head
- Garlic - 5 cloves
- Olive Oil - 1 fl oz
- Salt - to taste
Step by Step guide
Step 1
Peel the tomatoes, chop them, and transfer to a pot. Place on the heat, adding a pinch of salt. Cover with a lid.
Step 2
Peel the potatoes. Slice them into rounds. Also slice the carrot into rounds. Add the potatoes and carrot to the tomatoes. Chop the onion and add it to the vegetables.
Step 3
Remove the stems from the parsley and dill, tie them with kitchen twine, and add to the stew (then remove). Peel the zucchini and slice it into rounds. Slice the eggplant without peeling.
Step 4
Add whole cloves of garlic to the pot. Layer the eggplant and zucchini rounds on top of the vegetables. Add salt. Pour in the olive oil.
Step 5
Chop the parsley leaves. Add to the pot. Stir gently.
