Step by Step guide
Step 1
Sauté grated carrots and finely chopped onions in olive oil. Add diced zucchini, eggplant, bell pepper, and cauliflower divided into florets, and season with salt. Once the vegetables release their juices, simmer for about 25 minutes.
Step 2
Blend the tomatoes in a blender and use this paste to season the stew. Adjust the seasoning to taste.
