Vegetable Stew with Meat
Ingredients
- Eggplants - 1 piece
- Tomatoes - 1 piece
- Pork tenderloin - 5.3 oz
- Onion - 1 head
- Garlic - 6 cloves
- Orange Bell Peppers - ½ piece
- Olive Oil - 1 tablespoon
- Butter - 0.7 oz
- Ocean salt - to taste
- Grill Meat Spice Blend - 1 teaspoon
- Ground Black Pepper - ½ teaspoon
- Dried onion powder - 1 tablespoon
Step by Step guide
Step 1
Cut the eggplant into large cubes.
Step 2
Chop the bell pepper coarsely.
Step 3
Chop the onion coarsely as well.
Step 4
Melt both types of oil in a skillet.
Step 5
Chop the garlic coarsely.
Step 6
Cut the meat into cubes.
Step 7
Add the meat and onion to the heated oil. Set to medium heat. Sauté for 3–4 minutes.

Add the eggplant.
Step 9
Add pepper.
Step 10
Add the meat spices. Stir and simmer for about 5 minutes.

Add the bell pepper.

Chop the tomatoes and add salt.

After 5 minutes, add the tomatoes.

Add the dried onion powder, stir, and simmer for 5 minutes.
Step 15
Add the garlic. Stir.
Step 16
After 2–3 minutes, transfer to a plate and serve.
