Ingredients
- Soy Meat - 3.5 oz
- Courgette - 1 piece
- Eggplants - 1 piece
- Potato - 10.6 oz
- Orange Bell Peppers - 1 piece
- Onion - 1 head
- Garlic - 2 cloves
- Carrot - 1 piece
- Dill - 0.4 oz
- Parsley - 0.4 oz
- Vegetable Oil - 1 fl oz
- Passata Tomato Sauce - 1.8 oz
- Water - 20 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Finely chop the onion and garlic.
Step 3
Slice the carrots into half-moons. Peel the potatoes and cut them into large cubes.
Step 4
Cut the zucchini and eggplant into pieces of the same size.
Step 5
Remove the seeds from the pepper and cut it into large pieces.
Step 6
In a heavy-bottomed pot, heat vegetable oil and sauté the onion until translucent. Then add the garlic and cook for another 30 seconds.
Step 7
Add the carrots and tomato paste, and sauté, stirring, for about 5 more minutes.
Step 8
Add the potatoes, red bell pepper, eggplant, and soy meat, season with a little salt, and mix well. Pour in water and simmer covered for 20 minutes.
Step 9
When the potatoes are ready, add the zucchini and simmer for another 3 minutes. Taste and season with salt and pepper to your liking.
Step 10
Serve the finished stew with soy meat, garnished with fresh herbs.
