Ingredients
- Zucchini - 2 pieces
- Olive Oil - to taste
- Red Onion - 1 piece
- Garlic - 2 cloves
- Eggplant - ½ piece
- Fresh Red Pepper - 1 piece
- Canned tomatoes - 7.1 oz
- Thyme - 2 sprigs
- Mozzarella Cheese - 2.5 oz
Step by Step guide
Step 1
Preheat the oven to 200°C. Cut the zucchini in half lengthwise and scoop out the flesh with a spoon to create 'cups' about 1 cm deep.
Step 2
Chop the scooped-out flesh coarsely and set aside for the filling.
Step 3
Place the zucchini cups on a baking sheet, drizzle with 1 teaspoon of oil, season with salt, and bake for 10 minutes until almost tender.
Step 4
Sauté the onion and garlic in 1 teaspoon of oil for 5 minutes until soft, then add the eggplant, red pepper, and chopped zucchini.
Step 5
Sauté for another 10 minutes, then add the tomatoes and thyme and simmer for another 10 minutes until thickened. Transfer the filling into the cups and sprinkle with mozzarella.
Step 6
Bake for 10 minutes until the cheese starts to melt and the zucchini is completely tender. Serve with any vegetable salad.
