Ingredients
- Courgette - 3 pieces
- Tomatoes - 2 pieces
- Orange Bell Peppers - 1 piece

- Eggplants - 2 pieces
- Salt - to taste
- Onion - 1 head
- Garlic - 3 cloves
- Ground Black Pepper - to taste
- Vegetable Oil - 5 tablespoons
- Dry White Wine - 4 fl oz
- Feta cheese - 5.3 oz
- Chopped Sage Leaves - 1 bunch
- Dried Chamomile - 1 teaspoon
Step by Step guide
Step 1
Thoroughly wash and peel the vegetables. Slice the eggplants thinly, sprinkle with salt, and let sit for 30 minutes. Then rinse with water and pat dry.
Step 2
Slice the zucchini, dice the tomatoes and bell peppers, cut the onion into half rings, and slice the garlic.
Step 3
Sauté the onion and garlic in oil.
Step 4
Layer the vegetables on top of the onion and garlic. Season each layer with salt and pepper. Add the herbs and pour in the wine.
Step 5
Simmer covered for about 15 minutes.
Step 6
Serve with feta cheese and basil.
