Ingredients

  • Radishes - 6 pieces
  • Carrots - 2 pieces
  • Red Onion - ½ head
  • English Cucumbers - ½ piece
  • Sugar - 2 tablespoons
  • Salt - 1 tablespoon
  • Rice Vinegar - 1 qt
  • Dried Nori Seaweed - 2 pieces
  • Vegetable Oil - ¼ cup
  • Unfermented Soy Sauce - 2 tablespoons
  • Sweet Rice Wine - 1 tablespoon
  • Lettuce - 5.3 oz

Step by Step guide

Step 1

To prepare the vegetables with nori, place the radishes, carrots, onion, and cucumber in 4 separate bowls or jars.

Step 2

In a medium saucepan, bring sugar, salt, 1 cup of vinegar, and 2 cups of water to a boil, stirring to dissolve the sugar. Pour the liquid over the vegetables and let cool. Cover and refrigerate.

Step 3

Finely chop the nori in a blender. Add the oil, soy sauce, mirin, and remaining vinegar, and blend until smooth.

Step 4

Place the lettuce in a large bowl. Drain the marinated vegetables and place them on the salad. Serve.
