Ingredients
- Red Beans - ½ cup
- Chickpeas - ½ cup
- Lentils - ½ cup
- Bulgur - ½ cup
- Onion - 1 head
- Garlic - 2 cloves
- Butter - 1.8 oz
- Tomato Sauce - 8.8 oz
- Dried Oregano - to taste
- Salt - to taste
- Ground Black Pepper - to taste
- Apple - 3 pieces
- Sauerkraut - 14.1 oz
- White Cabbage - 1 piece
- Sugar - to taste
Step by Step guide
Step 1
Boil the head of cabbage as you would for regular cabbage rolls. Everyone has different techniques, so I won't go into detail here.
Step 2
Pre-cook the chickpeas, beans, and lentils.
Step 3
Prepare the filling: melt the butter in a skillet (you can substitute with vegetable oil), add finely chopped onion. Then, press in the garlic and sauté a bit more. Add the bulgur (you can substitute with cooked rice, buckwheat, pearl barley, or another grain of your choice) to the sautéed onion. Mix well so that each grain is coated with oil.
Step 4
When the bulgur is browned, add the cooked lentils, chickpeas, and beans to the skillet, and mix well. Season the mixture with tomato sauce, salt, pepper, sugar, oregano (and other spices to taste). If the bulgur is not swollen enough and the mixture is already thick, you can add water and continue to simmer.
Step 5
Prepare the layering: while the filling is simmering, peel the apples, remove the cores, cut them into quarters, and slice each quarter.
Step 6
Wrap the filling in a cabbage leaf. If the stem is too hard, you can cut off the top or gently pound it. You can lightly fry the cabbage rolls in a skillet until golden brown or place them directly in a pot.
Step 7
Layering: place a layer of sauerkraut, sprinkle a little apple on top, tightly arrange one layer of cabbage rolls, then add more sauerkraut and apples. Repeat until all the cabbage rolls are used. Cover the top layer with sauerkraut and apples. For added juiciness and rich flavor, pour spiced water over the cabbage rolls (you can mix it with the oil used for frying the rolls, or simply add salt, pepper, and spices to the water).
Step 8
Simmer for 45 minutes in the oven or over low heat with a lid.

Serve the cabbage rolls with sour cream and fresh herbs. Enjoy your meal!
