Ingredients

  • Olive Oil - 1 tablespoon
  • Onion - 1 head
  • Garlic Scapes - 3 cloves
  • Smoked Paprika - 1 teaspoon
  • Cumin - ½ teaspoon
  • Dried thyme leaves - 1 tablespoon
  • Carrot - 3 pieces
  • Celery - 2 stalks
  • Fresh Red Pepper - 1 piece
  • Fresh Yellow Pepper - 1 piece
  • Canned tomatoes - 28.2 oz
  • Lentils - 8.8 oz
  • Vegetable Broth - 8 fl oz
  • Young zucchini - 2 pieces
  • Thyme - 2 stalks

Step by Step guide

Step 1

Heat the oil in a large heavy-bottomed skillet. Add the onion and sauté until softened, about 5-10 minutes.

Step 2

Add the garlic, spices, dried thyme, carrot, celery, and peppers, and sauté for 5 minutes.

Step 3

Add the tomatoes, broth, zucchini, fresh thyme, and cook for 20-25 minutes.

Step 4

Remove the thyme sprigs. Add the lentils and bring to a boil again. Serve with basmati rice.
