Ingredients
- Potatoes - 4 pieces
- Tomatoes - 4 pieces
- Onion - 3 heads
- Vegetable Oil - 2 fl oz
- Green Bell Pepper - 1 piece
- Parsley - 3 sprigs
- Dill - 3 sprigs
- Ground coriander - 1 teaspoon
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Cut the potatoes into small cubes. Blanch the tomatoes, peel them, and chop the flesh finely. Roughly chop the herbs.
Step 2
In a heavy-bottomed pot, pour in the vegetable oil, add the finely chopped onion, and sauté until translucent.
Step 3
Add the potatoes, pour in 0.5 cup of water, and simmer over medium heat without a lid for about 10 minutes.
Step 4
Then add the tomatoes, cover with a lid, reduce the heat to low, and simmer the vegetables for 10 minutes.
Step 5
Remove the chakhokhbili from the heat, add the roughly chopped pepper and herbs, season with salt, and serve immediately.
