Ingredients
- Vegetable Oil - 2 tablespoons
- Onion - 2 heads
- Red Bell Pepper - 1 piece
- Chili Powder - 1 cup
- Cumin - 1 tablespoon
- Garlic - 6 cloves
- Canned Diced Tomatoes - 42.3 oz
- Water - 1 cup
- Canned Chipotle Peppers - 2 pieces
- Salt - 1 teaspoon
- Canned Three-Bean Mix - 60 oz
- Cilantro - 0.5 oz
Step by Step guide
Step 1
Remove seeds from the bell pepper and chop it, also chop the onion.
Step 2
Heat the oil in a heavy-bottomed pot over medium heat and sauté the onion, bell pepper, chili powder, and cumin for 7 minutes until the vegetables are soft.
Step 3
Add the chopped garlic and sauté for about 15 seconds, then add the tomatoes with their juice, water, chopped chipotle peppers, and salt. Bring to a boil, cover, and simmer for 30 minutes.
Step 4
Rinse the beans, add them to the pot, and simmer uncovered on low heat until the chili thickens slightly, about 30 minutes.
Step 5
Stir in the chopped cilantro, season with pepper and, if needed, salt, and serve.
