Description
The result is 9 balls, approximately 3-5 cm in diameter. This is a healthy, quick, and lighter recipe for lentil meatballs.
Ingredients
- Green-brown lentils - 5.3 oz
- Onion - 1 head
- Tomatoes in their own juice - 1 can
- Garlic - 3 cloves
- Extra virgin olive oil - 2 tablespoons
- Garam Masala - 2 teaspoons
- Salt - to taste
- Pine nuts - 1 tablespoon
- Cabbage - 1.1 oz
- Ground Flaxseeds - 1 tablespoon
Step by Step guide
Step 1
Soak the lentils overnight or for 4 hours, then cook until soft. Blend into a smooth paste.
Step 2
Sauté the onion, garlic, and cabbage in a skillet with a tablespoon of olive oil until softened. Add the garam masala spice mix (I used Sabji Masala for vegetables) and pine nuts (you can substitute with other nuts, such as cashews).
Step 3
Combine the onion-garlic-cabbage mixture with the lentils. Add a tablespoon of olive oil, ground flaxseeds, and blend until you achieve a puree-like consistency. Check the lentil mixture for seasoning and add salt, pepper, or more garam masala if needed. Form into balls and place in a baking dish.
Step 4
Now prepare the tomato sauce. In a heated skillet with olive oil, add the tomatoes in juice. Add your favorite herbs, such as dried basil. Stir and cook for about 2-3 minutes.
Step 5
Pour the sauce over the balls in the baking dish and place in the oven for 20 minutes.
