Vegetarian Manicotti
Ingredients
- Lentils - ¾ cup
- Black Beans - ¾ cup
- Tomato - 1 piece
- Onion - 2 heads
- Salsa Sauce - 3 tablespoons
- Cumin - 1 tablespoon
- Salt - to taste
- Ground Black Pepper - to taste
- Canned tomatoes - 14.1 oz
- Chopped Cilantro - 2 tablespoons
Step by Step guide
Step 1
Cook the beans and lentils according to the package instructions.
Step 2
Cook the pasta until it is slightly firmer than al dente. Drain and rinse under cold water.
Step 3
In a medium bowl, mix the lentils, cooked black beans, diced fresh tomato, diced onion, salsa sauce, and cumin. Season with salt and pepper to taste.
Step 4
Preheat the oven to 200°C (about 400°F).
Step 5
Stuff the manicotti pasta with the prepared mixture. Grease a baking dish with olive oil.
Step 6
Pour the canned tomatoes over the pasta. Sprinkle with cilantro.
Step 7
Cover the baking dish with aluminum foil. Place in the preheated oven for 30 minutes or until the tomatoes start to sizzle.
Step 8
Remove from the oven. Uncover and serve on plates.
