Vegetarian Moroccan Stew
Ingredients
- Onion - 1 head
- Minced garlic - 1 clove
- Water - 2 tablespoons
- Canola Oil - 1 tablespoon
- Potatoes - 2 pieces
- Carrots - 2 pieces
- Canned tomatoes - 1 can
- Ground Cumin - 1 teaspoon
- Tomato juice - 1 cup
- Green Beans - 17.6 oz
- Ground Black Pepper - ¼ teaspoon
Step by Step guide
Step 1
In a skillet, sauté the onion and garlic in oil until they become translucent. Add the carrots and potatoes and sauté on low heat for 15 minutes, stirring occasionally.
Step 2
Add the tomatoes and cumin. Cover and simmer on low heat for 1 hour. Check occasionally to see if more liquid needs to be added. If necessary, pour in the tomato juice in small portions.
Step 3
Add the green beans and simmer for another 15 minutes.
Step 4
Taste and season with pepper and cumin to your liking.
