Vegetarian Orzo
Ingredients
- Orzo Pasta - 9.7 oz
- Olive Oil - 1 tablespoon
- Eggplants - 1 piece
- Spanish onions - 1 head
- Red Long Chili Peppers - 1 piece
- Lemon - 1 piece
- Olives stuffed with lemon - 6.5 oz
- Basil - 3 tablespoons
Step by Step guide
Step 1
Cook the orzo pasta, drain, and set aside. In a large skillet, heat the oil, add the eggplant, onion, and pepper, and sauté for 7–8 minutes. Add the zest and juice of the lemon.
Step 2
Add the olives to the pasta, mix well, and heat through. Add the basil, season, and mix well. Serve immediately, drizzled with olive oil.
