Vegetarian Paella with Tofu
Ingredients
- Olive Oil - 2 tablespoons
- Marinated red tofu - 7.1 oz
- Champignon Mushrooms - 8.1 oz
- Carrots - 2 pieces
- Canned tomatoes - 14.1 oz
- Minced garlic - 4 cloves
- Brown Rice - 1 cup
- Saffron - 1 teaspoon
- Frozen Green Peas - 1 cup
- Lemon Juice - ¼ cup
- Leeks - 3 stalks
- Fresh corn - 1 piece
Step by Step guide
Step 1
In a wok, heat the oil over medium-high heat. When the oil shimmers, add the tofu.
Step 2
Sauté for 10 minutes, or until the tofu is browned, stirring occasionally.
Step 3
Add the mushrooms and sauté for another 4-5 minutes, or until the mushrooms release their juices and begin to brown.
Step 4
Add the carrots, corn, tomatoes, garlic, and sauté for another 2 minutes. Stir in the rice, pour in 2 ¼ cups of water, and add the saffron.
Step 5
Bring to a boil. Reduce the heat to medium, cover the wok, and let it simmer for 40 minutes, or until all the liquid is absorbed.
Step 6
Add the peas, but do not stir, cover with a lid to steam the peas.
Step 7
Remove the lid, pour in the lemon juice, and add the leeks, stirring to combine. Season with salt and pepper.
