Vegetarian Pasta Salad
Ingredients
- Farfalle Pasta - 15.9 oz
- Olive Oil - ¼ cup
- Garlic-Infused Olive Oil - 1 tablespoon
- Carrot - 1 piece
- Frozen Corn - 14.1 oz
- Red Bell Pepper - ½ piece
- Chives - ½ piece
- Tomato - 1 piece
- Chickpeas - 1½ cups
- Salt - 1 tablespoon
- Ground Black Pepper - to taste
- Balsamic Vinegar - 1 tablespoon
- Water - 1½ tablespoons
- Minced garlic - 1 clove
- Basil - 2 tablespoons
Step by Step guide
Step 1
Cook the pasta until al dente according to the package instructions. Drain and add a tablespoon of the olive oil and garlic mixture.
Step 2
In a bowl, combine the carrot, corn, pepper, chives, tomato, chickpeas, and chives. Season with salt and pepper, and mix well. Add the pasta and combine.
Step 3
To make the Provencal dressing, mix the remaining oil, vinegar, water, garlic, and basil. Season with salt and pepper, and mix well. Drizzle the dressing over the salad and toss. Let it sit for 30 minutes.
